Care for a bowl?

I have a reputation amongst family and friends for never following a recipe as it’s written and never making the exact same dish twice. What can I say in defense? I really don’t care! So I’m creative in the kitchen, I don’t see anybody turning down seconds! However there is one recipe….that I make few changes to; one I keep coming back to again and again. It’s good people, really, really good. And when I find something this good, it’s a crime not to share it.

Black Bean Soup ….. serves 6

2 tsp. olive oil

2 onions

2 jalapeno peppers, seeded, deveined, and chopped (wear gloves to prevent irritation!)

2 garlic cloves, minced

2 15oz. cans black beans, rinsed and drained

4 cups low-sodium chicken broth (veg. broth would make it vegetarian)

1 1/2 tsp chili powder

2 tsp oregano

2 tbsp dry Sherry

1/2 lime, juiced

1/2 tsp salt

2 tbsp chopped cilantro

2 green onions, minced

1 avocado, diced

light sour cream

Mrs. Dash Southwest Chipotle (salt-free seasoning)

1) In a medium saucepan, heat the oil. Saute’ the chopped onions, jalapenos and garlic until softened, about 5 minutes. Stir in the beans, broth, chili powder and oregano; bring to a boil. Reduce the heat and simmer, covered, until the flavors are blended, about 45 minutes. Remove from the heat; stir in the sherry, lime juice and salt. Cool slightly.

2) Transfer the soup to a food processor or blender; puree. Pour back into the saucepan and heat to serving temperature. Garnish with the cilantro or Mrs. Dash Southwest Chipotle (salt-free seasoning) , green onion, avocado and sour cream. This is excellent served with our favorite Jiffy brand cornbread and butter.

(Not including the avocado or the light sour cream) Nutritional Information per serving: 207 calories, 4 g total fat, 1 g saturated fat, 0 mg cholesterol, 292 mg sodium, 31 g total carbs, 7 g fiber, 11 g protein, 78 mg calcium.

And here’s a bonus quickie for you!

Instant Guacamole

1 very ripe avacado, diced

a squeeze or two of fresh lime juice

Mrs. Dash Southwest Chipotle (salt-free seasoning) to taste! WARNING!! This stuff is potent! So Beware. A little goes a long way.

This is a great quick dip to go with some baked tortilla chips when you’re craving Tex Mex but need to watch what you eat.
